With the weather heating up, why not cool down with something healthy and delicious. Last night I opted for a quinoa salad recipe from The New York Times. Filled with fresh vegetables and a vinegar lime marinade, this dish hit the spot. I added in some chopped walnuts and creamy feta cheese, for a personal kick! xo
