Fiesta Cool Down

With the summer months already upon us, I find it less appealing to cook warmer dishes. After a long day, what better way to get nourished than with cool cuisine? Cold salads can quickly turn boring, but mix in some Mexican flair and you've hit new heights. I recently made this Sweet Corn and Black Bean Salad from Whole Foods and it was a hit! Paired with a cheese quesadilla and your typical Monday night quickly turns into a fiesta. xo
