I Say Tomato

 As you wind down your summer garden and gather all those last minute vegetables, you might find more than you bargained for. For example, tomatoes. Luckily there are a few Fall recipes that use this ruby red vegetable as the main ingredient. One of my favorite comfort foods is cream of tomato soup. Each spoonful warms your belly and your heart. I like to add sourdough croutons for a nice crunch! Pasta is another great comfort food, but can get boring without the right sauce. Try the delicious tomato pesto paste, the secret ingredient being sun dried tomatoes for added depth and warmth. For a quick lunch, slather the paste on a piece of bread and top it with your favorite cheese! Lastly, a newer recipe that I can't wait to try -- tomato cobbler. This savory dish will be sure to transition you from summer to fall with ease...and fill your tummy too! xo
