April Showers: Tonight's Dinner

When it comes to April showers, your style won't be the only thing that changes. Your appetite takes a turn as well. Longing for those spring salads takes the back burner, and you find yourself resorting back to comfort food. Why not make your favorite comfort food healthier? Earlier this week I cooked up Smitten Kitchen's delicious Crunchy Baked Pork Chops. What makes this recipe especially great is the hand-made bread crumbs (I used D'Angelo's whole wheat sourdough bread). It does take time, but it's well worth it. The taste is to die for and is amazingly fresh. I paired this dish with couscous and a rustic red wine from The Ojai Vineyard.
